The Secret Is Smoked Cheddar
Today's recipe is a guest post from my love, Steve. He's the grill master in our family and the person behind some of our most memorable meals. These jalapeño poppers have become a tradition among friends, and after one bite, you'll understand why.
Inspired by gourmet cabin getaway weekends with lifelong friends, this all begins as you arrive at the cabin and walk across the bridge over the creek, where you can smell the rich applewood smoke wafting through the cool air, signaling that another legendary feast has begun.
For these grilled poppers, start with the largest jalapeños you can find, and with a thin, lengthwise slice, you create a perfect hat, then scrape out the heat to balance the flavor.
The cheese mixture is the real secret: buy blocks of smoked cheddar and an equal amount of cream cheese, shred the cheddar, and mix them together. The most crucial part of this recipe is using smoked cheddar; that smoky flavor is what makes all the difference and gives these poppers their unique, unforgettable taste.
If you do this right, you will have made too much of your cheese mixture, so you definitely want to have large portabella mushroom caps at the ready, which you will stuff with that cheese mixture and put those on the grill as an appetizer as well.
Once the jalapeños are filled and the hats are back in place, wrap each one tightly in a strip of bacon and secure it with a toothpick. It’s important to use real applewood chunk charcoal, not anything with chemicals in it. Once the coals are ready and the flames have died down, place the poppers on the grill. Stand there at the ready, actively moving and rotating them around on the grill, moving them from hot zones to cooler zones. You’ll know they’re done when the bacon is beautifully browned and crispy, which is the perfect cue to pull them off the grill.
Before biting into one of these, please make sure to tell your guests that each popper has toothpicks in them, so they can remove those toothpicks before enjoying their first savory bite.

Ingredients
12 large jalapeños
8 oz smoked cheddar block
8 oz cream cheese, softened
12 bacon strips
24 toothpicks
Steps
Prep the jalapeños: Take your 12 large jalapeños — the largest you can find. Slice a thin lengthwise cut to create a little hat. Set the hat aside and use a spoon to scrape out the seeds and ribs. This balances the heat and makes room for the good stuff.
Make the cheese mixture: Shred the entire 8 oz smoked cheddar block — do not use pre-shredded. Mix with 8 oz cream cheese until fully combined. This is the secret. The smoky flavor of the cheddar is what makes these unforgettable. You will have extra mixture — use it for the Stuffed Grilled Mushrooms.
Stuff the jalapeños: Fill each jalapeño generously with the cheese mixture and press the hat back on top. Wrap each one tightly with a strip of bacon and secure with toothpicks. Set aside.
Fire up the grill: Use real applewood chunk charcoal — no chemicals. Let the coals fully ash over until the flames die down completely before placing anything on the grate.
Grill the poppers: Place poppers on the grill. Stay at the grill — this is not a set-it-and-forget-it situation. Actively rotate and move everything between hot and cooler zones. The poppers are done when the bacon is deeply browned and crispy.
Serve: Before your guests take a single bite, remind them: every popper has toothpicks in it. Remove the toothpicks first. Then bite in and let the smoke do the talking.
Notes The smoked cheddar is non-negotiable — it’s the entire soul of this recipe. Buy the block and shred it yourself. Pre-shredded won’t give you the same result.
Bonus Recipe:
Smoked Cheddar Stuffed Mushrooms
These come together from the leftover cheese mixture in the Jalapeño Poppers recipe. Make both on the same grill and serve the mushrooms as the appetizer while the poppers finish cooking.

Ingredients
6 large portabella mushroom caps
Leftover smoked cheddar and cream cheese mixture (from Jalapeño Poppers recipe)
6 strips bacon, cooked and crumbled
¾ medium onion
3 cloves garlic
Steps
Cook the bacon: Fry 6 strips of bacon until crispy. Set aside to cool, then crumble.
Prep the mushrooms: Remove the stems and scoop out the gills from each portabella cap. Place the stems and gills in a food processor with the onion and garlic. Pulse until finely chopped.
Make the filling: Combine the mushroom mixture with the leftover smoked cheddar and cream cheese mixture until fully incorporated.
Stuff the caps: Fill each mushroom cap generously with the filling. Top with bacon crumbles.
Grill: Place the stuffed mushrooms on the grill over applewood charcoal. Cook until the mushrooms are tender and the filling is hot and lightly browned.
If Making the Mushrooms as a Standalone Recipe:
Shred 4 oz smoked cheddar and combine with 4 oz softened cream cheese until smooth. Use this mixture in place of the leftover filling from the Jalapeño Poppers recipe.
