Last night was the perfect date night—no kids, just a cozy evening with a fabulous, savory dinner that came together in under an hour.
I whipped up sautéed pork chops, one of Steve’s favorites, finished in the oven with fragrant sage and oregano. Paired them with sautéed shallots and shiitake mushrooms for that rich, earthy flavor.
On the side, a fresh arugula salad with sliced radishes straight from the garden. Those radishes were the real stars—gorgeous colors and shapes this year, adding a vibrant crunch to the plate.
I grabbed the pork chops on my way home, and everything else was fresh from the garden. Quick, impressive, and absolutely delicious—a date night dinner done right!
Sautéed Pork Chops
Ingredients:
Shallots
Shiitake Mushrooms
Olive Oil
Oregano flakes
Garlic
Salt
Italian Seasoning
Butter
Fresh Oregano
Fresh Rosemary
Saute the shallots and mushrooms with a little salt, drain and set aside
Coat the extra thick pork chops in olive oil, oregano flakes, garlic, salt, and Italian seasoning
Sear them on the stove top in butter and oil
Put them on a cookie sheet, and cover with the shallots, mushrooms, fresh oregano, fresh rosemary, and butter
375° for 18 minutes.
On the side:
Arugula with sliced radishes, served with your choice of dressing
