Weekend mornings invite a gentle pace — soft light filtering in, perhaps quiet music or just the sounds of the house waking up, and time to start the day nourished and steady.
The egg in this recipe comes straight from our flock. We keep a group of organic hens on the farm, and the difference in quality is something you notice immediately — yolks that are deeply orange, standing tall in the pan, with a richness that store eggs just don't have. If you want the full story on how we got started with chickens, I wrote about it here.
This simple breakfast delivers a healthy, grounding start: high-quality protein from a farm-fresh egg to keep you satisfied and energized, plus nutrient-rich elements like omega-3s, vitamins A, D, and E that support overall well-being. The rosemary-infused butter adds an aromatic lift with its own anti-inflammatory and digestive benefits, while good bread provides steady carbohydrates for sustained energy.
Farm Fresh Eggs with Rosemary Butter Toast
Serves 1
A nourishing, effortless way to begin the day.
For the Rosemary Butter:
1 tablespoon butter, softened
½ teaspoon fresh rosemary, finely minced
Pinch of sea salt
For the Egg:
1 farm-fresh egg
½ tablespoon butter
½ tablespoon olive oil
Sea salt
Freshly cracked black pepper
For Serving:
1 slice good bread (sourdough, country loaf, or artisan white)
Instructions:
Make the rosemary butter: In a small bowl, combine the softened butter with minced rosemary and a pinch of sea salt. Mix until evenly incorporated.
Toast the bread until golden and crisp. While still warm, spread it generously with the rosemary butter.
In a small skillet, heat the butter and olive oil over medium heat. Once the butter melts and begins to foam gently, crack in the egg.
Fry to your preference — about 3–4 minutes for sunny-side up with a runny yolk, or flip for over-easy. Season with sea salt and freshly cracked pepper while cooking.
Plate the egg beside the rosemary butter toast. Serve right away so the warm yolk can spill over the toast.
The bright yolk mingles with the herb-infused butter, creating a rich yet balanced bite. Simple ingredients, real nourishment, and a calm moment to enjoy it.
