Garlic Sautéed Greens with Fresh Tomato and Parmesan 🌿🍅
This vibrant, versatile dish celebrates fresh greens and can stand alone as a flavorful side or elevate pasta, rice, quinoa, or other grains.
Ingredients
2 cups fresh spinach leaves
2 cups kale, stems removed, leaves chopped
1/2 cup fresh basil leaves
4 cloves garlic, minced
3 tablespoons olive oil
2 medium fresh tomatoes, diced
1/2 cup freshly grated Parmesan cheese
Salt and freshly ground black pepper to taste
Red pepper flakes (optional)
Instructions
Prep the greens: Wash and dry all greens thoroughly. Remove tough stems from kale and roughly chop. Keep spinach and basil leaves whole.
Sauté the garlic: Heat olive oil in a large skillet over medium heat. Add minced garlic and cook for 30-60 seconds until fragrant but not browned.
Cook the heartier greens first: Add kale to the pan and sauté for 2-3 minutes until it begins to wilt and soften.
Add remaining greens: Add spinach and cook for another 1-2 minutes until wilted. Finally, add basil leaves and cook just until they begin to wilt, about 30 seconds.
Season: Add salt, pepper, and red pepper flakes if using. Toss everything together.
Finish and serve: Remove from heat. Top with diced fresh tomatoes and generous amounts of grated Parmesan cheese.
Serving Suggestions
As a side dish: Serve immediately alongside grilled chicken, fish, or roasted vegetables
Over pasta: Toss with cooked pasta, adding a splash of pasta water if needed
With grains: Serve over rice, quinoa, farro, or couscous
On crusty bread: Pile onto toasted bread for a rustic bruschetta-style dish
