Note: We intentionally leave out Parmesan cheese in this base recipe to maximize versatility for different dishes. You can always add freshly grated Parmesan when using the pesto in your final dish.
Ingredients:
Fresh basil (mix of holy, Thai, sweet, or any preferred variety), about 2 cups packed
1.5 cups pine nuts
1 head of garlic, peeled
Olive oil, as needed (approximately 1/2 to 3/4 cup)
Salt, to taste
Black pepper, to taste
Equipment:
Food processor
Instructions:
Add fresh basil to the food processor.
Secure the lid on the food processor.
With the food processor running, slowly add the following through the top chute:
1.5 cups pine nuts
Peeled cloves from 1 head of garlic
A steady stream of olive oil
A pinch of salt and black pepper
Continue processing and adding ingredients slowly, pausing to taste and check consistency.
Stop when the pesto reaches your desired texture and flavor balance.
Serve immediately or store in an airtight container in the refrigerator.
