Roasted Butternut Squash and Pomegranate Salad with Balsamic Vinaigrette
Ingredients
For the Roasted Butternut Squash:
1 medium butternut squash (about 2-3 lbs), peeled, seeded, and cut into 1-inch cubes
3 tablespoons olive oil
1 teaspoon sea salt
½ teaspoon freshly ground black pepper
2 teaspoons fresh rosemary, finely chopped (or 1 teaspoon dried)
For the Roasted Pepitas:
⅓ cup raw pepitas (pumpkin seeds)
1 tablespoon olive oil
¼ teaspoon sea salt
For the Salad:
4 cups mixed greens (combination of butter lettuce and arugula)
½ cup pomegranate arils
⅓ cup feta cheese, crumbled
For the Balsamic Vinaigrette:
¼ cup balsamic vinegar
½ cup extra virgin olive oil
1 teaspoon Dijon mustard
1 teaspoon honey or maple syrup
1 small garlic clove, minced
¼ teaspoon sea salt
⅛ teaspoon black pepper
Instructions
Roast the Butternut Squash:
Preheat oven to 425°F (220°C).
Toss butternut squash cubes with olive oil, sea salt, black pepper, and rosemary until evenly coated.
Spread in a single layer on a parchment-lined baking sheet.
Roast for 25-30 minutes, flipping halfway through, until tender and caramelized at the edges.
Let cool slightly.
Roast the Pepitas:
While the squash roasts, toss pepitas with olive oil and sea salt.
Spread on a small baking sheet or add to the squash pan during the last 8-10 minutes of roasting.
Roast until golden and fragrant, watching carefully to prevent burning.
Remove and let cool.
Make the Balsamic Vinaigrette:
In a small bowl or jar, whisk together balsamic vinegar, Dijon mustard, honey, minced garlic, salt, and pepper.
Slowly drizzle in olive oil while whisking continuously until emulsified.
Alternatively, add all ingredients to a jar with a tight lid and shake vigorously for 30 seconds.
Taste and adjust seasoning as needed.
Assemble the Salad:
Arrange mixed greens on a large serving platter or individual plates.
Top with warm or room-temperature roasted butternut squash.
Scatter pomegranate arils, crumbled feta, and roasted pepitas over the top.
Drizzle with balsamic vinaigrette just before serving, or serve dressing on the side.
Serves: 4 as a side salad or 2 as a main course
Pro tip: The vinaigrette can be made up to 5 days ahead and stored in the refrigerator. Shake well before using!
