Zucchini Appetizer Rounds Recipe
Ingredients
For the zucchini rounds:
2 medium zucchinis, sliced into 1/2-inch rounds
2 tablespoons ghee (clarified butter)
1/4 cup grated Parmesan cheese, plus extra for topping
1 teaspoon spice blend (we love Whatever! All-Purpose Blend from the Wayzata Bay Spice Co)
1/2 teaspoon red cracked pepper
Salt to taste
For the dip:
Reserved zucchini pulp (from scooped rounds)
3 cloves garlic
1/4 onion, roughly chopped
1 tablespoon lemon juice
2 tablespoons olive oil
1/4 cup grated Parmesan cheese
1 teaspoon seasoning (e.g., salt, pepper, or your favorite herb blend)
Fresh herbs (e.g., parsley, basil, or dill), optional
Instructions
Prepare the zucchini rounds:
Preheat your oven to 350°F (175°C).
Slice zucchinis into 1/2-inch rounds. Using a small spoon or melon baller, scoop out the pulp from the center of each round, leaving a shallow cup. Reserve the pulp for the dip.
In a bowl, toss the zucchini rounds with the spice blend, grated Parmesan, red cracked pepper, and a pinch of salt.
Sauté the rounds:
Heat ghee in a large skillet over medium heat. Add the zucchini rounds in a single layer, cooking for 2-3 minutes per side until golden brown. Flip carefully to keep the seasoning intact.
Bake:
Transfer the sautéed rounds to a baking sheet. Grate additional Parmesan cheese over the tops.
Bake in the preheated oven for 10 minutes, until the cheese is melted and the zucchini is tender.
Make the dip:
In a food processor or blender, combine the reserved zucchini pulp, garlic, onion, lemon juice, olive oil, Parmesan cheese, and seasoning. Blend until smooth.
Taste and adjust seasoning as needed. Stir in fresh herbs if using.
Serve:
Arrange the warm zucchini rounds on a platter with the dip in the center. Serve immediately while hot.
