Small Traditions Carry Big Meaning
Birthdays are for making kids feel special, and for ours, nothing does that better than a stack of chocolate chip pancakes. It’s their favorite, and the joy on their face when they see that golden stack is why we keep this tradition alive.
It takes 15 minutes to whip up a batch. In that short time, you’re not just making breakfast—you’re showing them you know what they love. It’s a small gesture, but it lands big. Kids notice when you pay attention to what makes them happy.
Here’s how we do it:
Chocolate Chip Birthday Pancakes
Makes about 8-10 pancakes
Ingredients:
1 ½ cups all-purpose flour
2 tablespoons granulated sugar
1 large egg
1 ¼ cups buttermilk
½ cup chocolate chips
1 teaspoon ground cinnamon
1 tablespoon baking powder
½ teaspoon salt
1 teaspoon vanilla extract
2 tablespoons unsalted butter (for cooking)
Instructions:
Mix Dry Ingredients: In a large bowl, whisk flour, sugar, baking powder, cinnamon, and salt.
Combine Wet Ingredients: In another bowl, beat the egg, then mix in buttermilk and vanilla extract.
Make Batter: Pour wet ingredients into dry. Stir gently until just combined—lumps are fine. Fold in chocolate chips.
Heat Pan: Warm a non-stick skillet or griddle over medium heat. Add a small pat of butter to coat.
Cook Pancakes: Pour ¼ cup of batter per pancake. Cook until bubbles form and edges set (2-3 minutes). Flip and cook 1-2 minutes more until golden.
Serve: Stack them up and serve warm with maple syrup, whipped cream, or extra chocolate chips for that birthday flair.
